Mitz Cooks: Slutty Brownies and Lemon Drizzle Goodness

The “Good Good”

In this video I was making these cakes for a charity bake sale at work. Slutty Brownies have always been a staple from university (shout out Ella for showing me the ways) and I have tried my hand a fair few times with the lemon drizzle since welcoming the new year.


Now the reason why we have two completely different bakes here is because, for those of you who don’t know, I work with children. Where there are children, there are parents. Now I don’t know about you, but when I was a kid, I went for the cake that looked the prettiest/chocolatiest (here we are making words again.) Now I’m older, I have so much love for a good plain sponge. So in my head the inspiration came from making sure the kids and the parents walked away happy!


Lemon Drizzle Goodness

Ingredients for the loaf:

The drizzle:

  • 4oz of brown sugar

  • Juice from the 1 whole lemon you grated for the zest

Tools:

  • 2lb loaf tin

  • 2lb loaf tin liners/greaseproof paper

  • Cheese grater

  • Cooking scales

  • Electric mixer


Method:

First thing’s first- preheat your oven to 180°C. It’s oh so simple from here on out. Grate your one whole lemon first, because that is going to be what takes the longest. You can do this with a zester but if you don’t have one of those, be resourceful and use a cheese grater, it does the job! Once you have skinned your lemon put it to one side as we are going to use that later as part of our drizzle. Take your lemon zest and put it in your mixing bowl along with all of your other ingredients for the loaf. Carefully mix the ingredients together with your mixer until you get a thick and heavy consistency. Line your 2lb loaf tin with a loaf tin liner (I have found these to be a god send), pour your mixture in and put in the oven for 35 minutes!


Whilst your waiting, get your 4oz of brown sugar and place it in a bowl. Now, you are going to take that lemon that you zested and squeeze it on to the sugar until you can squeeze no more. If you don’t get a syrupy consistency, you may want to try and squeeze another half a lemon’s juice or top it up with lemon juice from the jar! Try heating this in the microwave for a few seconds so the sugar and the juice become one.

Once your 35 minutes are up, take your lemon drizzle cake out! It should change the aroma in your kitchen! Smells so good! Now, I know mine came out a bit on the burnt side, but I actually prefer it that way (I’m always the girl that requests the corner pieces of cakes for that extra crunch). The middle is moist and will stay so moist for as long as you don’t put it past the 40 minute mark so make sure you do time it! Let your loaf sit for 10 minutes and carefully lift it up and out using the sides of the liner/greaseproof paper. Place on a chopping board and pull the paper from the edges then apply your drizzle. Leave to cool for around 20 minutes as this gives the drizzle enough time to set, soak in and get crunchy! Enjoy!


Slutty Brownie

Please be rest assured we did not label them slutty brownies for the kids but this is the term for them. A slutty brownie was first introduced to me by one of my closest friends and housemates at university, Ella. It was one of the first things we bonded over as I remember vividly getting an invite to her flat to make these alongside the other girls who we were set to live with in third year! Safe to say, this formed a great foundation for our friendship.

Ingredients:

  • 1 pack brownie mix (serves 12) / your own original brownie mix

  • 2 packs of cookie dough mix (serves 6/8)/ your own original cookie dough mix

  • 2 packets of Oreos (double stuffed if you dare)

Tools:

  • Deep 8x8 baking tray


Method:

The method is super simple for this. Pre-heat your oven to the temperature that is instructed on the back of your brownie mix box. The reason we do this is because your bake consists most of the brownie so it is important that is cooked accordingly. Now, you are going to take your cookie dough mix and follow the instructions on the back of the packet or make your own. Once the desired consistency is achieved take your cookie dough and press flat to line the bottom of your baking tray (like I have in the video). The reason why I advise getting two mixes of cookie dough is because I found it quite hard to spread this apart across the tray evenly- but it is up to you! The fun part for me is aligning the Oreos across the tray on top of the cookie dough. After that, your final step is to mix up your brownie mix and then pour on top on the Oreos and cookie dough. Bake your brownies for as long as instructed on your brownie mix box. Once finished, set aside to cool then enjoy!


Top tip- best served with cold milk!

Let me tell you now, though my lemon drizzle looked kinda (really) burnt, it actually was so nice, yellow and moist in the middle. They did take a little longer to sell, but the brownies were a show stopper!


As you can see, we were raising money for Roald Dahl's Marvellous Children's Charity. A charity that helps to make life better for seriously ill children in the UK. If you were thinking of hosting a charity event for your work place/community but don't quite have a charity in mind- I would encourage you to read up on the amazing work they do and consider them as your chosen charity.
